Hi there! It sounds like you’re getting ready for summer! It’s great that you’re focusing on managing your weight again, but it’s also important not to give up on delicious food, right?
So, today I’ve brought a recipe for a healthy and low-carb noodle salad using konjac noodles. Konjac is a plant from the Amorphophallus genus, also known as devil’s tongue or elephant yam. The main component is glucomannan, which is a water-soluble dietary fiber. Because of this, konjac noodles have a chewy texture and can be used in various dishes. Later on, I’ll share more konjac recipes with you, but for now, let’s try making a konjac noodle salad!
How to Make
- Several shrimp (I used shrimp today, but you can substitute with chicken breast, beef, tofu, etc., according to your preference)
- Salad vegetables
- PB2 powdered peanut butter
- Vietnamese-style sweet and sour sauce
- Konjac noodle
When you get the konjac noodles, you’ll need to briefly blanch them in boiling water. It’s recommended to blanch them in hot water for about 1 minute, as rinsing them directly in cold water might leave a peculiar smell from the konjac. After blanching, drain the noodles and rinse them under cold water. Once drained, your konjac noodles are ready to use.
You can either grill the shrimp or blanch them. For today’s recipe, I blanched them! I sautéed them with garlic, salt, and pepper in a frying pan. It’s also delicious if you add them on top after grilling!
On your favorite plate, layer the salad vegetables, prepared noodles, and shrimp. It’s that easy!
For the sauce, I’ll use Vietnamese sweet and sour sauce to enjoy a new flavor profile. I sprinkled some PB2 powdered peanut butter on top for added richness, but you can skip it if you don’t have any.
